Its made from four varieties of black olives which are native to the region. The olives are harvested when theyre fully ripe and stored in an airtight environment. Gentle fermentation intensifies their rich flavour. The olives are then cold pressed to preserve their character and aroma. If youve never tasted a black olive oil, this is an excellent place to
