The grappa obtained from the Bagnomaria distillation of Chardonnay pomace in batch stills is aged for at least 36 months in small oak barrels with a capacity of 225 liters. During the aging period, the master distiller closely monitors the evolution of the blend, examining flavors and aromas until a unique balance is achieved.
